Day 3 – Raw Vegan Tacos To Go!

Happy Australia Day!

Australia Day is essentially the 4th of July – BBQs, parades, fireworks, etc.
They’re celebrating the raising of the British flag  in Sydney Cove in 1788. This established the British colony of New South Wales and the site of the city of Sydney. (Thanks Google.)

Today we spent the day on the boat in Sydney Harbour. (It’s summer on this upside-down continent.) So I needed to plan all our raw vegan meals to-go. I packed the obvious: a whole lot of fruits and veggies to snack on and two big salads*. But I wanted to make something with a bit more pizzazz. A raw vegan taco bar! What’s more patriotic than an American in Australia preparing Mexican for ‘Straya Day?

Raw Vegan Tacos
makes about 8

Taco Mix
1 cup raw walnuts
3/4 tsp cumin
1/4-1/2 tsp chili powder
1/4 tsp paprika
1/8 tsp minced garlic
1/8 tsp onion powder
1/8 tsp cayenne
1/8 tsp dried oregano
1/8 tsp sea salt
1 Tbsp nama shoyu (raw, unpasteurized soy sauce)
1 tsp cold pressed olive oil

  • Pulse all ingredients in food processor until mixed. Don’t over blend!

Tomato Salsa
1 cup diced tomatoes
1/2 cup diced red bell pepper (capsicum)
1/8-1/4 cup diced red onion
1/8-1/4 cup chopped fresh cilantro
1/2 clove minced garlic
1/2 lime, juiced
1 Tbsp cold pressed olive oil
sea salt and black pepper to taste

  • Toss all ingredients together in a medium bowl.

Sour Cream
1/2 cup raw cashews
1 tsp apple cider vinegar
1/2 lemon, juiced
3-4 Tbsp water

  • Pulse all ingredients in food processor. Add water slowly until desired thickness is reached. Sour cream will not be completely smooth (but still amazing).

Optional raw vegan taco fillings
Avocado
Sliced jalapeño
Extra cilantro
Extra lime juice

  • Serve each taco folded in a lettuce leaf.
  • I packaged each taco ingredient in a small container so we could make our own right on the beach. We used iceberg lettuce leaves as our taco shells. Even the meat-eaters liked this one!
