Day 9 – Informed Eating and Raw Slaw

Day 9 and I’m feeling fine! I’m enjoying all this raw food and the research I’m doing because of it. I came across this today and love it!

I’ve had plenty of criticism about my raw diet (and vegetarianism in general), but am I really the eccentric one? Do most people even think about the foods they eat?  I think it’s time we all “chew over” what we put in our mouths, and form informed eating habits.

Informed eating requires people to know where their food comes from, what ingredients are in it, and how it’s made. It involves understanding what a factory farm is and what genetically modified means.

Informed eating is something I’m really passionate about. Many people have no idea about what is healthy. They consume foods that they think are good for them, but these foods are actually doing them harm. Package foods are typically processed and contain harmful, man-made ingredients. Even so-called “lite” or “low-fat” options are filled with chemicals to replace whatever was taken out. These chemicals are usually worse for your health than what was removed in the first place.

We deserve to know about what we are putting in our bodies. Only then are we able to make informed decisions on what we choose to eat.

Today, I chose a colorful, healthy Raw Slaw:

Raw Lau informed eating

Raw Slaw

Slaw
2 cups red cabbage, shredded
1 cucumber
2 carrots
2 celery stalks
2 Tbsp fresh parsley, chopped

Dressing
2 Tbsp raw tahini
2 Tbsp apple cidar vinegar
1/2 lime, juiced
1 tsp fresh garlic, minced
1 tsp fresh ginger, minced
pinch sea salt and black pepper
3 Tbsp cold pressed olive oil

  • Grate or finely chop cucumber, carrots, and celery into a large bowl. Toss with chopped cabbage and parsley.
  • In a small bowl, whisk together all dressing ingredients except oil. Once combined, slowly add oil while whisking.
  • Pour dressing into slaw. Toss to combine. Serve : )
