Day 25 – Raw Coconut Lemon Bars

I just made amazingly yummy coconut lemon bars! I am loving this raw thing. I feel great, and this dessert recipe is healthy enough to eat for breakfast.
Now this isn’t my own creation, but I did change it a bit to suit my taste (and hopefully yours!)
I drink lemon water all the time (a squeeze of lemon in my plain water), and I am a huge advocate of our friend the lemon.
Lemons are quite healthy. They have antibacterial, antiviral, and immunity boosting powers. Lemon juice is also a digestive aid and a liver cleanser. Lemons contain citric acid, calcium, vitamin C, magnesium, and they fight infection and promote immunity. Lemons are alkalizing. Your body strives to be alkaline, and lemons restore balance to the body’s pH. Lemons also neutralize free radicals linked to ageing and many diseases.
Lemons are lovely little sour fruits and give great flavor to these sweet, moist bars. Read about the amazing benefits of coconuts in yesterday’s post, Day 24.
Raw Coconut Lemon Bars

makes 8 bars
1 cup raw almonds
1 ½ cups dates, soaked 5 minutes
½ tsp vanilla powder
1 lemon, juice and zest
1 ¼ cup dessicated coconut, plus more for topping
pinch sea salt
- Process almonds in food processor until fine.
- Squeeze water from dates and add one at a time to food processor.
- Add in remaining ingredients and process until dough forms.
- Lightly sprinkle the bottom of a loaf pan with coconut. This keeps the bars from sticking.
- Pour batter into loaf pan and spread evenly with the back of a spoon.
- Sprinkle more coconut on top of bars.
- Invert pan onto cutting board, giving the bottom a few taps until dough falls out.
- Cut into 8 equal bars.
