Day 28 – Quick and Creamy Raw Broccoli Soup

I love super quick and easy soup recipes! They come together faster than I can even make a salad, and they are so satisfying! Today’s super-filling creamy raw broccoli soup does just that.
Broccoli is a super star when it comes to nutrition. It is full of protein (even more per gram than red meat!), vitamins A and C, folic acid, calcium, and fiber. Eating broccoli is linked to lower rates of cancer – especially of the breast and colon, and lowering blood pressure. Broccoli helps both skin and the immune system repair itself, and it is good for stomach ailments and eye health.
Raw broccoli consumed whole can be a little taxing on the digestive system, meaning it err.. repeats itself ALL day. Blending it into a raw broccoli soup gives your digestive system a rest and allows it to assimilate all of the enzymes and nutrients easily. You can also eat a lot more of it this way, as a blended head of broccoli is much easier to eat at one sitting than if it is whole.
Creamy Raw Broccoli Soup
serves 2-3
2 1/2 cups broccoli
1/2 cup raw cashews
1/4 cup celery
1 Tbsp chopped onion
1/2 clove garlic
1/2 lemon, juice and zest
1/2 tsp cumin
1/2 tsp tamari
pinch of dried thyme
pinch of dried parsley
pinch of black pepper
2 cups water, separated
1/2 cup broccoli, diced
- Blend all of the ingredients, except the 1/2 cup diced broccoli, with 1 cup of water in a blender until smooth.
- Warm remaining cup of water. Add to blender and pulse to combine.
- Transfer to serving bowls and sprinkle diced broccoli on top.
