Caramel Crumble Raw Apple Pie Recipe

I asked (tweeted) what I should do with my 10kg of freshly picked apples and was told I had to make a raw apple pie. So I created one to share with you. But it’s not just any apple pie – I made you a Caramel Crumble Raw Apple Pie that’s to die live for!
It is starting to feel like autumn here in Australia. So naturally, this New Yorker thinks everything should taste like apples or pumpkins! As soon as the leaves start to change color back home, every eatery and pre-made food company comes out with fall-flavored foods. Think pumpkin or apple flavored EVERYTHING. The flavored coffee at Dunkin’ Donuts alone is important enough to take over my Facebook news feed.
This raw apple pie combines all the lovely seasonings of autumn – apple, cinnamon, nutmeg, and caramel – to make a ridiculously delicious dessert that not only pleases the omnivores but is healthy too! I would know, I ate it for breakfast this morning.
This may seem like a complicated recipe, but I promise it is easy to make and TOTALLY worth it! You don’t even have to clean the food processor between steps.
Caramel Crumble Raw Apple Pie
Crust
1 cup raw walnuts
1/2 cup dates
1/2 tsp cinnamon
1/4 tsp ginger
- Process walnuts into a fine meal in food processor.
- While running add dates a few at a time to food processor.
- Add spices and combine.
- Transfer mixture to pie plate or spring-form pan and press to form a crust.
Filling: Layer 1
1 apple
1 Tbsp lemon
1 tsp psyllium
pinch cinnamon
pinch salt
- Peel and core apple.
- Add all ingredients to food processor and process into mush.
- Pour into crust and spread evenly with back of a spoon.
Layer 2
2 apples
1 Tbsp lemon
1 tsp psyillium
3/4 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp allspice
- Peel and core apples. Thinly slice into half-moons and place in a medium bowl.
- Add remaining ingredients to bowl and toss to coat. Feel free to use your fingers here.
- Layer coated apples evenly over layer 1.
Crumble
1/4 cup raw walnuts
1/8 cup raw almonds
1/8 cup raw macadamia nuts
1/3 cup raisins
1/4 tsp ginger
1/4 tsp cinnamon
- Add all ingredients to food processor and pulse a few times to break down to a course texture.
- Sprinkle on top of layer 2.
Caramel Sauce
1/4 cup soaked dates (start soaking when you make the crust)
1-2 Tbsp soaking water
1 Tbsp almond butter
1 tsp lemon
pinch salt
pinch vanilla powder
- Process all ingredients in food processor until smooth starting with 1 Tbsp of water.
- Add water as necessary until desire consistency is reached.
- Transfer sauce to either a piping bag or to one corner of a small plastic bag. Snip off the tip of the corner and pipe the sauce onto the pie. I drew lattice over mine!
