Raw Chocolate Mousse Bars

As most of you already know, I strongly recommend exercising daily. There are so many benefits from keeping active that it is crazy not to participate in some form of physical activity every day. Just a few of the awesome benefits of regularly breaking a sweat include: controlling weight and improving body-image, boosting energy, decreasing risk of disease, improving mood and decreasing stress, promoting better sleep, improving learning ability and keeping your brain fit, and even enhancing your sex life!
Of course what you eat after exercise is equally as important as your workout. And so, I recently published my first eBook, Post Workout Power Smoothies. These bars are very rich as the mousse layer has a dark chocolate flavor, but that is what makes them so awesome! They are good eaten out of the fridge, or try freezing them for a more fudgy texture. (They’re still soft enough to cut when frozen!)
Raw Chocolate Mousse Bars
makes 8-12 bars
Cookie Layer
2 cups raw walnuts
1 cup pitted dates
1/2 cup dessicated coconut
1/2 cup cold-pressed coconut oil
Mousse Layer
2 avocados
3/4 cup cacao powder
1/4 cup pitted dates
1/4 cup dessicated coconut
1/4 cup cold-pressed coconut oil
1/2 banana
- Add the cookie layer ingredients to food processor and process until just broken down.
- Press into the bottom of a loaf pan and set aside.
- Add mousse layer ingredients to food processor and process for 3-5 minutes or until completely creamy.
- Spread on top of cookie layer. Sprinkle with chopped walnuts and/or coconut for garnish. Place in refrigerator at least 30 minutes or until ready to serve.
