Magenta Raw Coleslaw

When I say I’m a raw vegan to most omnivores, they expect that I eat unrecognizable eccentric foods. And lettuce. They always ask about lettuce. Most people don’t realize the array of raw foods that I eat. I actually think I eat a wider variety of foods now than when I was an omnivore myself. There are endless combinations of fruits, vegetables, seeds, and nuts that marry into delicious raw vegan meals. But you already knew that!
So here is a raw vegan recipe perfect for you to share with your vegan and omnivore friends. And with the name “coleslaw” it won’t even scare anyone away before the first bite!
Magenta Raw Coleslaw
serves 2-4
Slaw Ingredients
1 large carrot
1 beetroot
1 cucumber
1/4 red onion
3/4 cup diced red cabbage
3/4 cup diced green or savoy cabbage
Dressing Ingredients
4 Tbsp cold-pressed olive oil
2 Tbsp apple cidar vinegar
pinch sea salt
pinch pepper
1 clove garlic, minced (optional)
- Shred or grate carrot, beet, and cucumber into a large bowl.
- Dice onion and cabbage, and add to bowl.
- Add dressing ingredients to bowl and toss to combine.
